What are Black Autumn Truffles?
Autumn Truffles, also known as Tuber Uncinatum, are a prized seasonal variety celebrated for their deeper, more intense flavour compared to Summer Truffles. Popular in European cuisine, they offer a rich, earthy profile with notes of hazelnut, chocolate, and forest floor.
Appearance, Aroma and Flavour
The exterior is dark brown to black with a rugged, bark-like texture. Inside, the flesh is marbled with white veins running through a coffee-coloured interior. Early in the season, the aroma is subtle, but as autumn progresses, the truffles develop a robust, nutty scent and a full-bodied flavour that enhances both simple and gourmet dishes.
How to use Fresh Truffles
Autumn Truffles are versatile and elevate a wide range of dishes. Slice thinly over pasta, risotto, or scrambled eggs, or grate into sauces and meat dishes for a luxurious finish. For a simple treat, enjoy them raw on warm bread with extra virgin olive oil and sea salt.
For a starter, we recommend approximately 10 grams of Autumn Truffles per person. For a main course, allow around 20 grams per person.
How to care for your Fresh Truffles
Autumn Truffles are perishable and should be consumed within 5–7 days of delivery. Store them in the refrigerator, wrapped in paper towel inside an airtight container. Replace the paper towel daily to maintain freshness. Full care instructions are included with your delivery and available on our Truffle Care Guide.
All fresh truffle orders are shipped in specialist refrigerated packaging and delivered by recorded delivery, requiring a signature upon receipt. Please ensure someone is available to receive your order. Upon arrival, unwrap your truffles carefully and store them as instructed.

Where do you source your truffles?
We started our business by sourcing fresh truffles from one specific region in Central Italy, but experience has enabled us to understand that the finest truffles grow all over Europe and even further afield. We will source truffles from wherever the quality is at its best at any specific time. During last years season we have sourced truffles from France, Spain, Italy, UK, Australia and even New Zealand.
What determines the quality of truffles is a combination of the variety of truffle, the time of year, the macro and micro climatic conditions, and the skill of the local hunter.
Are truffles organic?
Truffles will only grow in pristine conditions; they will not tolerate any type of contamination that may explain why they are so rare and valuable.
However they cannot be sold as “Organic” unless the plantations or wild forests they are hunted from are certified as Organic.
Can I cook with your products?

Our products are incredibly versatile. In theory they are designed primarily as finishing products, a drizzle to finish and transform a dish.
But as you will find out, they can also be used as cooking ingredients.
How should I store my truffles?
Fresh Truffles are best eaten as soon as possible. When you receive your truffles, we suggest you immediately wrap them individually in kitchen paper and place in an air tight glass jar in the refrigerator until use.
Please don’t keep them for more than one week!
What wine do you recommend with fresh Truffles?
When eating fresh Truffles raw, we would recommend any full flavoured dry white wine, for example an Italian Pecorino, Verdicchio, or Falanghina. Alternatively try a new world Chardonnay or Viognier.
When eating cooked black autumn or winter Truffles, try a full flavoured lighter bodied red wine, maybe a Sangiovese, Grenache, or a new world Pinot Noir.
Good quality sparkling wine or Champagne is always a good match with fresh Truffles, and is superb with fresh Truffle canapes!
