Truffled Figs in Blankets

Sweet figs wrapped in grilled aubergine, roasted to perfection and finished with a touch of truffle. These indulgent bites offer a luxurious balance of salty, sweet, and earthy flavors.

Serves: 12

  • 12 small figs, halved
  • 24 sage leaves
  • 2 aubergines, finely sliced
  • 2 tbsp maple syrup
  • 2 tbsp Black Truffle Slices
  • 1 tbsp olive oil
  • 1 tsp salt
  1. Preheat your oven to 180˚C. Slice your aubergine into thin strips and arrange on a baking tray. Season with salt and bake for 10-15 mins. Allow to cool and prepare your figs.
  2. Place a sage leaf on top of each halved fig and then carefully wrap them with grilled aubergine. Brush with maple syrup and return to the oven to roast for a further 10 minutes.
  3. Garnish with a slice of black truffle on top.
