What are Black Summer Truffles?

The most popular truffle used in Italian cooking. Their earthy rich flavour develops as the season progresses, offering wild mushroom, hazelnut, vanilla and earthy tones.

Appearance, Aroma and Flavour

The surface is black in colour and resembles a textured bark from which the Italian name ‘Summer Scorzone’ is derived. The insides feature a golden tone, entwined with branches of white veins and almost resembling a nut like appearance. At the beginning of the season they start with less flavour, delicate, and once mature towards midsummer, the flavour has fully developed to become much stronger.

How to use Fresh Truffles

Suitable on any dish! They are best sliced if used raw, or grated if cooked. Largely used in Italian cuisine in stuffed pasta or in meat roulade sauces. They are however, fabulous on a slice of bread with a little extra virgin olive oil and a pinch of salt.

For a starter we recommend you allow approximately 10 grams of Black Summer Truffles per person. Please allow approximately 20 grams per person for a main course.

How to care for your Fresh Truffles

Black Summer Truffles are perishable but they will last up to 5-7 days if stored correctly. Simply follow the care instructions enclosed with your delivery and visit our Truffle Care Guide on instructions for care and storage.

All of our fresh truffle orders are shipped in specialist refrigerated packaging and delivered by recorded delivery which requires a signature upon receipt. Therefore, please ensure you are available to take receipt of your order. As soon as your Fresh Truffles arrive, unwrap them carefully from their packaging.

Where do you source your truffles?

We started our business by sourcing fresh truffles from one specific region in Central Italy, but experience has enabled us to understand that the finest truffles grow all over Europe and even further afield.  We will source truffles from wherever the quality is at its best at any specific time.  During last years season we have sourced truffles from France, Spain, Italy, UK, Australia and even New Zealand.

What determines the quality of truffles is a combination of the variety of truffle, the time of year, the macro and micro climatic conditions, and the skill of the local hunter.

Are truffles organic?

Truffles will only grow in pristine conditions;  they will not tolerate any type of contamination that may explain why they are so rare and valuable. 

However they cannot be sold as “Organic” unless the plantations or wild forests they are hunted from are certified as Organic.

Can I cook with your products?

Please take a look at the various recipes on our website. 

Our products are incredibly versatile.  In theory they are designed primarily as finishing products, a drizzle to finish and transform a dish. 

But as you will find out, they can also be used as cooking ingredients.

How should I store my truffles?

Fresh Truffles are best eaten as soon as possible. When you receive your truffles, we suggest you immediately wrap them individually in kitchen paper and place in an air tight glass jar in the refrigerator until use.

Please don’t keep them for more than one week!

What wine do you recommend with fresh Truffles?

When eating fresh Truffles raw, we would recommend any full flavoured dry white wine, for example an Italian Pecorino, Verdicchio, or Falanghina. Alternatively try a new world Chardonnay or Viognier.

When eating cooked black autumn or winter Truffles, try a full flavoured lighter bodied red wine, maybe a Sangiovese, Grenache, or a new world Pinot Noir.

Good quality sparkling wine or Champagne is always a good match with fresh Truffles, and is superb with fresh Truffle canapes!
