Preheat your oven to 180˚C. Slice your aubergine into thin strips and arrange on a baking tray. Season with salt and bake for 10-15 mins. Allow to cool and prepare your figs.
Place a sage leaf on top of each halved fig and then carefully wrap them with grilled aubergine. Brush with maple syrup and return to the oven to roast for a further 10 minutes.
