Origin; In and around the Sibillini Mountain National Park, Umbria and Le Marche, Central Italy.

Size
Typically we ship Black Truffles at around 15-30 grams per piece, although larger examples are used to fill orders of large quantities (orders more than 100 grams). We can ship specimen Black Winter Truffles (individually more than 100 grams) on request subject to availability.
External Appearance of Black Winter Truffles
The exterior of these Truffles ranges from a dark brown to deep black colour, occassionally with a hint of reddishness. The outside surface has a slightly rough finish, which should be quite firm to the touch, with just a hint of softness.
Internal Appearance of Black Winter Truffles
When sliced in half, Black Winter Truffles should demonstrate a clear white marbling on a mahogony brown to dark black background. If they are white inside, they are not mature and will be lacking in flavour and aroma.
Aroma and Taste of Black Winter Truffles
Our Black Winter Truffles have a rich, sensual aroma, with earthy flavours reminiscent of chocolate, vanilla, and garlic.
When past their best; these Truffles tend to start hardening and begin to lose their wonderful aroma and flavour after around a week, although when past their best they can also turn soft and spongy.

Around 70% of our Black Winter Truffles are hunted Wild, with the balance hunted from cultivated forest plantings in and around the Sibillini Mountain National Park, Le Marche and Umbria, Central Italy.
Keeping
These Truffles have a short shelf life, and ideally should be consumed within 1 week of being hunted. A good Black Winter Truffle can still retain its flavour and aroma for up to 2 weeks but this is the exception rather than the rule. These Truffles typically lose around 2 or 3 % of their body weight every day.
Other Notes
Italian Fresh Black Truffles often known as Norcia truffles, are considered to be the finest Black Winter Truffles in the world. These Black Truffles are the same variety as the French Perigord Truffles. The Fresh Black Winter Truffles (T. Melanosporum) should not be confused with the Fresh Black Autumn Truffles (T. Uncinatum).
